  • Is pork safe to eat slightly pink?

    Yes, it can be. Modern food safety guidelines now recognise that pork is safe to eat when cooked to an internal temperature of 63°C and allowed to rest for at least three minutes. At this temperature, the meat may still be slightly pink in the centre but is safe and juicy. Overcooking pork can lead to dryness, so using a meat thermometer is the best way to ensure it’s both safe and tender. However, processed pork products like sausages or mince should still be cooked thoroughly to 70°C or higher to ensure all bacteria are destroyed.

  • How should I store pork to keep it fresh?

    Raw pork should be kept in the coldest part of your fridge and used within 1–2 days. If you’re not using it within that time, freeze it in an airtight container or freezer bag. Most pork cuts can be frozen for up to 6 months, though for the best quality, try to use them within 3–4 months. Label packaging with the date before freezing to track freshness. When defrosting, do so in the fridge rather than at room temperature to reduce the risk of bacteria. Cooked pork can be refrigerated for up to 3 days in a sealed container.
